General Manager Lew Gemell, is industry "veteran" of 29 years with philosophies on hospitality that are surprisingly simple. He embraces a culture that is team oriented and driven by strong, inspired leadership. "If everyone is aligned and motivated to achieving the same goal then success is inevitable." He believes in that old cliche that people are the main asset of any organisation. The difference at Cruise is that the theory is in fact reality.
Lew leads the team at Cruise with a focus on the fundamentals. "Never forget the true meaning of the word 'hospitality'. It's not an industry, it's a state of mind". Adhering to that simple thought resulted in adopting an attitude at Cruise of relentlessly aspiring to uncompromising consistency of product and outstanding customer service.

Luis Bruce  Operations Manager

"I do what I love & I love what I do"

Officially crowned the Best Bartender in Australia at the 2009 AHA National Awards for Excellence, Luis Bruce is our resident cocktail master. With over 15 years industry experience, Luis heads the front of house team at Cruise, setting a service standard second to none.
Luis also designed Sydney's original Cocktail Course offering an insight into the history, style and influences of the cocktail culture, while sharing tricks of the trade & a few special recipes of his own.
