When Luis Bruce steps behind a bar is whole personality comes to life. He is in his element, and it is obvious to all who see him in action. It's the place he belongs, mixing delectable liquid creations that tantalise the tastebuds and awaken the senses.
With over 15 years experience, Luis has designed countless cocktails and taught many classes. His designs have been published in magazines, used for Television, product launches, special events, and have been the highlight of cocktail lists in numerous high profile bars including the Signature Cocktail menu at Cruise.
The perfect example of Luis' love for his art is the enormously popular Cocktail Courses at Cruise. The course has rapidly built a reputation as a highly entertaining cocktail experience, often booked out months in advance. The success of the high demand course has recently inspired an up shoot of similar one off courses across Sydney. Although he would never boast about it, the course Luis designed is the original and the best.
Luis was crowned Bartender of the Year by the NSW Australian Hotel Association in November 2008, he then went on to win the national title in 2009. Recently Luis was promoted to Operations Manager, heading the front of house team at Cruise.
