Head Chef Jason Lucas brings a new direction to Cruise Restaurant, focusing on his specialty; Italian Cuisine, with a modern style that is
truly his own.

With a passion for culinary art, Jason prides himself on an innovative food philosophy, creating signature dishes infused with fresh bold
flavours, presented with unique artistic style.

Jason Lucas was formally trained in Sydney's iconic restaurants Darling Mills, Lunico and the Queen Victoria Building Tearooms, under the guidance of talented Chef's such as Carlos Rupetto, Danny Russo and Edward Fallon.

Taught traditional values and methods from an early age, Jason was brought up by his grandfather who believed in keeping traditions alive, cooking family
recipes and developing an understanding of food and flavour that would later enhance Jason's creativity.

It wasn't until Jason
travelled around the world, that he was consumed by a love of cooking and dining. The experience was life changing and provided a new found respect for all that his grandfather had instilled in him.

The foundation of cooking was established in this passionate young chef. His formal training focused on Italian and Japanese cuisine, providing an excellent grounding and the confidence to continue to develop his own signature dishes with flair, sophistication and elegance.

Jason commenced as Head Chef at Cruise Restaurant in August 2008. With his own brand of cookery, Jason was the finishing touch to the new look Cruise Restaurant team.

Specailising in Modern Italian cuisine, Jason has reshaped the menu and lifted the Cruise dining experience to an award winning level.

In a few short months after his arrival, Cruise Restaurant won the NSW title of 2008 AHA Best Hotel Restaurant, and is currently nominated for the national award.

Keeping the Cruise menus fresh with seasonal changes, Jason uses the finest produce available, selecting only premium ingredients to build each dish he designs. Every plate is presented with creative flair, intended to elude to the eye the sensational flavour the is mouth can expect to experience.
